Black Bean Quinoa Salad

I posted a picture on IG and FB of the amazing black bean quinoa salad we had at our Fourth of July dinner, and a lot of people asked for the recipe. So I will list it out for you here. This is a recipe my mother-in-law discovered at a party she attended and we have been loving it ever since. Sometimes quinoa isn't the most tasty base out there but in this salad it's divine!

Black Bean Quinoa Salad

1 c. quinoa (prepped as stated on box)

Mix below ingredients together in large bowl, then add quinoa last:

1 can black beans           
½  small onion, chopped (red or white, based on preference)
½  bell pepper, chopped
~ ¼ cup kalmata olives, chopped (approx)
~ ½ cup cherry tomatoes, quartered (approx )
~ 1/8 cup fresh basil, chopped (approx )
¼ t. garlic powder
½ t. salt
cracked pepper           

Top above with dressing and toss:

2 T. apple cider vinegar
2 T. EVOO

(optional) Sprinkle final salad with Bragg’s liquid aminos (or you may substitute soy sauce), to taste.

Serve chilled.

  3. Just made this.. can be tweaked easily.. I doubled the recipe, used regular olives and a large tomato (or 2) and no vinegar or basil.. it is DELICIOUS! Make sure you drain the beans and rinse them though!
