Black Bean Quinoa
Salad
1 c. quinoa
(prepped as stated on box)
Mix below ingredients together in large bowl, then add
quinoa last:
1 can black
beans
½ small
onion, chopped (red or white, based on preference)
½ bell
pepper, chopped
~ ¼ cup kalmata
olives, chopped (approx)
~ ½ cup cherry
tomatoes, quartered (approx )
~ 1/8 cup fresh
basil, chopped (approx )
¼ t. garlic
powder
½ t. salt
cracked
pepper
Top above with dressing and toss:
2 T. apple
cider vinegar
2 T. EVOO
(optional) Sprinkle final salad with Bragg’s liquid aminos
(or you may substitute soy sauce), to taste.
Serve chilled.
I am not usually a fan of quinoa, but this looks great. I think. I'll be picking a few things up to try it.

ReplyDeleteJust made this.. can be tweaked easily.. I doubled the recipe, used regular olives and a large tomato (or 2) and no vinegar or basil.. it is DELICIOUS! Make sure you drain the beans and rinse them though!
